From a very young age, cooking and baking have appealed to me. Some of my earliest memories are of rummaging around and making messes in the family kitchen, back in South Florida. Over the years, I have worked diligently to develop my culinary skills and found that I, probably due to a rather competitive and perfectionist personality, thrive on challenging myself to produce the best — whether it is in the kitchen or the materials that my communications company develops.
After moving to Denmark in 2014, I began baking American-style cookies and offering them as gifts to friends — both Danes and people around the world.
Baking authentic American recipes in Denmark has presented special challenges, and it has taken time and patience to adapt to many changes, from baking temperatures and standard units of measurement to the quality and procurement of ingredients.
With a little experimentation and many hunting expeditions for the right ingredients, I finally obtained the result I was hoping for: a high-quality cookie decadently delicious enough to be completely irresistible.

Soon tasters began to exclaim, "OMG, these are freaking delicious! I would totes buy these!" From here, a new business concept was born and a niche market for ultra-premium, freshly baked cookies and biscotti emerged.
Now — in collaboration with my Danish husband Michael — we are working hard to bring our treats to the Danish market in hopes that our passion for quality is evident in every single bite, and, more importantly, that our treats will spread a little more "hygge" in my beloved, adoptive country. I love these decadent delights because they are such an unexpected surprise, and prove that biscotti can be tender, flavorful and intensely satisfying. Try them for yourself - I'm sure you'll be singing their praises as well.
Ginger with Soul is my absolute favorite. The round taste of white Valrhona chocolate mixed with sour-sweet lemon and a sharp edge of ginger, gives a taste experience that I have not found anywhere else. Try it yourself if you want to try something exceptional.
